This salad is tropical, delicious, creamy, and sweet all at the same time…oh, and it’s LEAN!
- Baby Lettuce
- A few chunks of pineapple
- 1/4 of a blood orange (or regular orange)
- 1/4 Grapefruit
- Sprinkle of pomegranate
- Couple Cubes of Papaya
- Sprinkle of Unsweetened Coconut Shavings
- Combine all ingredients in a large salad bowl, dress with pineapple coconut tahini dressing
- 1 Tbsp Tahini
- 1/3 Cup Coconut Vinegar (or apple cider vinegar)
- Splash of Pineapple Juice
- 1/2 Tbsp Coconut Nectar or Agave (Coconut is low Glycemic Index and better for fat loss)
- Dash of Pepper
- Combine all ingredients and whisk with a fork. Drizzle desired amount onto your Hawaiian salad!
