Lean Southwestern Salad

This is a healthy take on a typically heavy salad..But don’t let the healthy talk fool you, this salad packs a punch!

Lean Southwestern Salad

Ingredients

  • 1 Cup Baby Lettuce
  • 1/3 cup black beans
  • Sliced cherry tomatoes
  • A handful of full cilantro leaves
  • 1/2 of a Brown Rice Tortilla (Whole Foods has these)
  • OR
  • 1/2 of a Corn Tortilla
  • 1 Red Pepper, sliced
  • 1/4 of an avocado, diced into cubes

Instructions

  1. Slice the tortillas into long strips. Place the strips into a pan without oil on a low-medium heat for 2 minutes on each side (or until crunchy)
  2. Combine all vegetables and beans into a large salad bowl, squeeze fresh lime juice over the top, and then drizzle with Lean Southwestern Dressing. Can be topped with chicken if desired.

Lean Southwestern Dressing

Ingredients

  • Mrs. Dash Fiest Lime Seasoning
  • 1/3 cup coconut vinegar (whole foods)
  • 1 tsp Chipotle Tobasco Sauce (any store)
  • 1/2 tsp Grapeseed or Olive Oil
  • Dash of Salt

Instructions

  1. Whisk together and drizzle on top of your Southwestern Salad!
